It embodies the signature blend of 80% Pinot Noir and 20% Chardonnay, sourced exclusively from the sun-drenched, south-facing slopes of Bouzy. The bouquet is expressive, unfolding with aromas of pear, ripe citrus and warm spices, mingling with nuances of toasted bread and orange zest. On the palate, it is medium- to full-bodied, showcasing a livelier, more luminous fruit profile than its predecessor, driven by racy acidity and finishing with a pronounced saline finish. True to the estate’s approach, maturation take place in 350-liter oak barrels, with the final cuvee composed from a mosaic of approximately 25 distinct parcels across Bouzy. The dosage is set at two grams per liter. This important grower-bottler is based in the tranquil village of Bouzy, nestled within the Montagne de Reims. The family’s viticultural heritage spans eight generations, yet it was only in 1946 that Pierre Paillard took the step of vinifying his own wines, ceasing the longstanding practice of selling their fruit to the local cooperative. The estate’s modern renaissance began in 2008 with the arrival of Pierre’s grandson, Antoine Paillard, who joined his father, Benoît, in the winery. Antoine assumed full responsibility for vinification in 2016, and in 2018, his brother Quentin entered the fold, ushering in a new chapter of refinement. The domaine’s 30 plots, extending across 11 hectares, are planted predominantly with Pinot Noir (80%), complemented by 20% Chardonnay, primarily massal selections. The vineyards are conscientiously plowed, and since 2008, the estate has adhered to a chemical-free regimen, save for essential mildew treatments-an approach shared by many in the region. In the cellar, fermentation is initiated by native yeasts, though selected yeasts are employed for the prise de mousse. Sulfites are added during pressing and, if necessary, after malolactic fermentation. Elevage spans nine months in 350- and 600-liter barrels, sourced primarily from coopers such as Cavin, Chassin, Francois Freres and Atelier Centre France, with 5% to 10% of the barrels refreshed annually. Dosage is low, typically ranging between zero and three grams per liter. Bouzy’s predominantly south-facing slopes yield wines of commanding presence-expansive and full-bodied yet harmoniously counterbalanced by a chalky extract that imparts both structure and an invigorating sense of freshness. “The chalk lies relatively close to the surface, between 50 and 100 centimeters beneath the clay-limestone topsoil. With carefully managed yields and meticulous farming, we achieve full ripeness without compromising freshness,” explains Antoine Paillard. A significant evolution for the estate came in 2018, when the brothers expanded their scope beyond Bouzy, vinifying wines from other villages. In addition to Bouzy, their portfolio now includes cuvees from Verzenay, Ludes and Taissy, with forthcoming releases from Ambonnay and Verzy. Though they do not farm vineyards outside their ownership (which remains exclusive to Bouzy), they maintain full control over harvest timing, and it is their team that picks the grapes. The wines from Verzenay and Verzy, in particular, offer a more vibrant, brighter profile due to their predominantly north-facing slopes-an increasingly compelling attribute in the context of Champagne’s warming climate. On the palate, the wine is medium to full-bodied, deep and tight-knit, with superb concentration and structural tension, built around racy acids and concluding with an attractively chalky finish. In keeping with the vintage, this is quite a tensile, reserved Grande Sendrée, but its potential is considerable. Readers should plan on forgetting the 2008 for another four or five years if they wish to catch it at the beginning of its plenitude. The Klein Constantia 2021 Vin de Constance reflects a great vintage on the Cape. The three-week period in March when fruit is harvested is Winemaker Matthew Days favorite time of year. He loves the way the sunshine hits this beautiful part of the vineyard. Muscat de Frontignan is planted to 40% bush vines and 60% trellised vines (this section is harvested last). They make as many as 25 to 30 passes through the vineyard at harvest. Because Muscat lacks acidity, they pick the bush vines early. Magic happens, he says, during maceration, when aromas of candied fruit and honey fill the winery. This is a beautifully balanced wine that stands on three pillars, all carefully aligned: sugar, acidity and alcohol. This vintage has 165 grams per liter of residual sugar and between 14% and 14.5% alcohol. Micro-oxidation is encouraged through the oak, especially during the first one and a half years of maturation. Today it is still going strong. Clear in color, it has quite a deep garnet core. The nose is very seductive with black fruit, leather, scorched earth, a hint of lavender all beautifully defined and quintessentially Margaux. The medium-bodied palate has exquisite balance, the acidity nicely judged, still a little masculine and "solid" compared to the subsequent vintages under Paul Pontallier, yet fresh and vital. Sure, there is a grittiness and a touch of rusticity towards the finish, but all in all, this represents a great 1978 Left Bank and a signpost that the First Growth was back on the right track after a dismal run of vintages during the 1970s. The palate is well balanced with vibrant, citrus-driven fruit, plenty of finesse and elegance here with a refined, detailed and succinctly poised finish. Understated but beautifully crafted. It has 13.8% alcohol, which is relatively modest for the vintage. Deep garnet-purple colored, it straight away pops with bright, vivacious notes of crushed blackcurrants, juicy blackberries and redcurrant jelly with slowly emerging nuances of candied violets, stewed plums, licorice and black tea, plus a waft of dusty red soil. The medium-bodied palate is built like a brick house with super firm, super ripe, grainy tannins and bold freshness supporting the muscular black fruits, finishing long and savory with lingering mineral suggestions. This is so, so delicious and, due to the ripeness of tannins, approachable now. It will be difficult to keep your mitts off it for a good 5-7 years, when all those tightly tucked away nuances should begin to emerge. From its hugely ester-filled, borderline-volatile nose through its thickly-sweet and new-oaky palate presence, to its unctuous but (its name notwithstanding) decidedly warm finish, this is the very model of a modern major fruit bomb, about which I can’t help but wonder where it’s headed in the bottle and whether it will seem less over-the-top in a few years’ time. For all of this wine’s textural torpor and lavish ripeness, one can no more overlook its formidable underlying tannins than one can its 100% new oak. All that said, those sufficiently wealthy and well-placed to access this Siberian ticket will experience an amazing sheer intensity and length, as surreally sweet black fruit preserves mingle with tea, tar, and pencil lead. The sleek 2021 Almaviva is a good example of that, still very young and still marked by the élevage in oak after spending 20 months in French oak barrels, 71% of them new and the rest only second use. The final blend was 71% Cabernet Sauvignon, 22% Carmenere (from Peumo), 5% Cabernet Franc and 2% Petit Verdot, a variety that might gain in percentage, as they have even planted some more with the idea to possibly replace Merlot in the medium or long term. It's not a shy wine, hitting the scale at 15% alcohol and with mellow acidity, 4.65 grams (tartaric) and a pH of 3.81 The fruit is dark, ripe and spicy, nothing green about it; it's a little shy, less expressive than the warmer years are early on and a little more discreet but with potential to develop in bottle. The tannins are still present, and it should benefit from some more time in bottle. The 2019 had more volume than the 2018, and the 2020 is closer to the 2019 than the 2018. 200,000 bottles produced. It was bottled between late January and early February 2023. I tasted it next to the 2020 and 2018, and it's closer to the latter; but this 2021 is more elegant, and 2018 is a little more austere and herbal.(The Wine Advocate, Sep 01, 2023)
